German speaking Restaurant General Manager – for a high-end, large volume Restaurant Group in Germany

We are seeking an experienced Restaurant General Manager to lead the operation of a large-volume, high-end buffet restaurant in Germany. This person will lead a restaurant with approximately EUR 3-4 million net annual sales and a high six-figure annual guest volume.

The successful candidate will be a visible, hands-on leader responsible for operational excellence, guest satisfaction, team performance, and commercial results. The restaurant operates in a large-volume, premium hospitality environment, serving a broad international and Asian culinary offering to a significant number of guests. The General Manager will have overall responsibility for operational excellence, guest satisfaction, financial performance, team leadership, service standards, and compliance.

This is a hands-on operational leadership position for an individual who enjoys being present on the restaurant floor, leading from the front, developing people, solving problems quickly, and maintaining exceptional standards during high-volume service.

This role is particularly suited to a General Manager who has successfully led a large-scale restaurant, luxury hotel F&B operation, premium concept, or similarly complex hospitality business and is ready to take full ownership of a major operation in Germany.

Key Responsibilities:

• Lead the restaurant's daily operations and ensure exceptional service and guest experience.
• Manage, motivate, and develop a large multicultural team.
• Maintain high standards of service, quality, cleanliness, and operational efficiency.
• Oversee staffing, scheduling, costs, KPIs, budgets, and profitability.
• Work closely with the Executive Chef to ensure smooth and consistent buffet operations.
• Analyze business performance and make effective decisions under pressure.
• Ensure compliance with German food safety, health, safety, and employment regulations.
• Lead operational improvements and, where applicable, support pre-opening and launch activities.

Requirements:

• Several years of experience in a comparable leadership role within a high-volume restaurant, luxury hotel, resort, or complex hospitality operation .
• Proven ability to lead and develop large teams with a visible, positive, and demanding leadership style .
• Strong commercial awareness, analytical thinking, and decision-making skills.
• Buffet and pre-opening experience are highly advantageous.
• Fluent German and good English .
• Strong hands-on operational experience; purely desk-based profiles are not suitable .
• Residence near the restaurant or willingness to relocate.
